Mexican Hotcakes

I thought I would dedicate my first post to the first meal of the day, breakfast. Mostly, this is the only picture of food I can find on my computer right now, and by computer, I mean my Picasa library.




Congrats! You just viewed some delicious Mexican hotcakes (pronounced hotcakes in Spanish). These are surprisingly popular and on most breakfast menus throughout Mexico, which means they were probably invented there. The particular batch pictured above was from Hotel Maria Cristina, located in Mexico City.

Mexico is not necessarily known for consistency, but the hotcakes have never disappointed.  When I was 10 years old they tasted like vanilla cake, and 18 years later, they still do. I don't know if it's the altitude or what, but they are like clouds, fluffy fluffy clouds.

Although I admit, the last time I visited, the bacon on the side was more like a tooth-breaking clump of rocks (not pictured). Nothing like the salty, melt in your mouth strips from Restaurant "Linda Vista," at Catlina Resort  in Zihuatanejo (look down).


Did you really  think I would write my first post and not  turn it around to focus on bacon?!?
